
Carrot Ginger Soup
Silky smooth soup with warming ginger and sweet carrots

Sauté the aromaticsHeat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant but not browned.

Cook the carrotsAdd the chopped carrots to the pot along with the turmeric, cumin, and cayenne pepper (if using). Stir to coat the carrots with the spices and oil, cooking for 2-3 minutes to release the flavors.

Simmer the soupPour in the vegetable broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes until the carrots are very tender when pierced with a fork.

Blend until smoothRemove the pot from heat and let cool slightly. Using an immersion blender, blend the soup directly in the pot until completely smooth. Alternatively, carefully transfer the soup in batches to a standard blender, securing the lid with a kitchen towel to prevent hot liquid from escaping.

Add finishing touchesReturn the soup to the pot if using a standard blender. Stir in the coconut milk and lemon juice. Warm over low heat if needed. Season with salt and pepper to taste.

Serve and garnishLadle the soup into bowls and garnish with a swirl of coconut milk, fresh herbs, and a sprinkle of black pepper. For extra texture, consider adding toasted pumpkin seeds or croutons on top.
