  1. Prepare the mangoes
    Peel the green mangoes and julienne them into thin strips. Place in a large mixing bowl. Add the sliced bell pepper, carrot, and shallot to the bowl.
  2. Make the dressing
    In a small bowl, whisk together the fish sauce, lime juice, and palm sugar until the sugar dissolves. Add the chopped chilies and stir well to combine. Taste and adjust seasoning if needed.
  3. Combine ingredients
    Pour the dressing over the mango mixture. Add the chopped mint and cilantro. If using dried shrimp, add them now. Toss everything together gently to coat all ingredients with the dressing.
  4. Let flavors meld
    Allow the salad to sit for 5-10 minutes to let the flavors develop and for the mango to slightly soften from the acidity of the lime juice.
  5. Garnish and serve
    Just before serving, sprinkle the crushed peanuts over the top of the salad. Serve immediately for the best texture and flavor.
