  1. Make the Cajun seasoning
    In a small bowl, combine the paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, black pepper, white pepper, salt, and dried basil. Mix thoroughly until all spices are evenly distributed.
  2. Prepare the chicken
    Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 3/4 inch. This ensures even cooking. Pat the chicken dry with paper towels.
  3. Season the chicken
    Brush the chicken breasts with olive oil on both sides. Generously coat both sides of each chicken breast with the Cajun seasoning mixture, pressing it in gently to adhere.
  4. Preheat the grill
    Heat your grill to medium-high heat (about 375-400°F). Clean and oil the grates to prevent sticking.
  5. Grill the chicken
    Place the seasoned chicken breasts on the preheated grill. Cook for 5-7 minutes on each side, or until the internal temperature reaches 165°F and grill marks appear. The exterior should be slightly blackened but not burnt.
  6. Rest before serving
    Transfer the grilled chicken to a clean plate and tent loosely with aluminum foil. Let it rest for 5 minutes to allow the juices to redistribute throughout the meat.
