  1. Prepare the corn
    Cut the kernels from the corn cobs and use the back of your knife to scrape the cobs to extract the corn milk. Set aside both the kernels and milk.
  2. Sauté the vegetables
    In a large, heavy-bottomed skillet or Dutch oven, melt the butter over medium heat. Add the diced onions, bell peppers, and celery. Cook until softened, about 5-7 minutes, stirring occasionally.
  3. Add aromatics
    Add the minced garlic and jalapeño (if using) to the vegetable mixture and cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Cook the corn
    Add the corn kernels, corn milk, Cajun seasoning, and dried thyme to the skillet. Stir well to combine all ingredients. Reduce heat to medium-low and cook for about 10 minutes, stirring occasionally.
  5. Add cream and simmer
    Pour in the heavy cream and stir to incorporate. Allow the mixture to simmer for another 5-7 minutes until slightly thickened and the corn is tender but still has a slight bite to it.
  6. Season and finish
    Season with salt and black pepper to taste. Remove from heat and stir in the sliced green onions and chopped parsley, reserving a small amount for garnish if desired.
