  1. Prepare the oven
    Preheat your oven to 350°F (175°C). Place the unbaked pie crust in a 9-inch pie dish and crimp the edges decoratively. Refrigerate while preparing the filling.
  2. Mix the wet ingredients
    In a large bowl, beat the eggs until frothy. Add the melted butter and mix until well combined. Stir in the buttermilk, vanilla extract, and lemon juice until smooth.
  3. Add the dry ingredients
    In a separate bowl, whisk together the sugar, flour, nutmeg, salt, and lemon zest. Gradually add this dry mixture to the wet ingredients, stirring constantly until completely incorporated and smooth.
  4. Fill the pie crust
    Remove the pie crust from the refrigerator and pour the filling mixture into it. The filling will be quite liquid, which is normal.
  5. Bake the pie
    Place the pie on the middle rack of the preheated oven. Bake for 45-50 minutes, or until the top is golden brown and the center is just slightly jiggly. The pie will continue to set as it cools.
  6. Cool and serve
    Allow the pie to cool completely on a wire rack for at least 2 hours before serving. For best results, refrigerate for at least 1 hour after cooling to room temperature. Serve with a dollop of whipped cream if desired.
