Ingredients
Instructions
-
Prepare the ovenPreheat your oven to 350°F (175°C). Place the unbaked pie crust in a 9-inch pie dish and crimp the edges decoratively. Refrigerate while preparing the filling.
-
Mix the wet ingredientsIn a large bowl, beat the eggs until frothy. Add the melted butter and mix until well combined. Stir in the buttermilk, vanilla extract, and lemon juice until smooth.
-
Add the dry ingredientsIn a separate bowl, whisk together the sugar, flour, nutmeg, salt, and lemon zest. Gradually add this dry mixture to the wet ingredients, stirring constantly until completely incorporated and smooth.
-
Fill the pie crustRemove the pie crust from the refrigerator and pour the filling mixture into it. The filling will be quite liquid, which is normal.
-
Bake the piePlace the pie on the middle rack of the preheated oven. Bake for 45-50 minutes, or until the top is golden brown and the center is just slightly jiggly. The pie will continue to set as it cools.
-
Cool and serveAllow the pie to cool completely on a wire rack for at least 2 hours before serving. For best results, refrigerate for at least 1 hour after cooling to room temperature. Serve with a dollop of whipped cream if desired.
