  1. Prepare the sauce
    In a small bowl, combine soy sauce, mirin, sake, brown sugar, grated ginger, and minced garlic. Stir well until sugar is completely dissolved and set aside.
  2. Cook the onions
    Heat vegetable oil in a large skillet over medium heat. Add sliced onions and cook for 8-10 minutes, stirring occasionally, until soft and translucent with light caramelization.
  3. Prepare the pork
    Add the sliced pork to the skillet with onions. Cook for about 3-4 minutes until the pork begins to change color and is no longer pink on the outside.
  4. Add the sauce
    Pour the prepared sauce mixture over the pork and onions. Reduce heat to medium-low and simmer for 10-12 minutes, until the sauce thickens and coats the meat with a glossy glaze. Stir occasionally to ensure even coating.
  5. Reduce the sauce
    If the sauce is too thin, increase the heat slightly and cook for an additional 2-3 minutes until it reaches the desired consistency. The sauce should be thick enough to coat the back of a spoon.
  6. Assemble the bowls
    Divide the cooked rice among 4 serving bowls. Top each bowl with an equal portion of the glazed pork and onion mixture, making sure to include plenty of sauce.
  7. Garnish and serve
    Sprinkle each bowl with toasted sesame seeds and sliced green onions. Serve immediately while hot, allowing diners to mix the pork and sauce with the rice for maximum flavor.
