Instructions

  1. Prepare the tomato mixture
In a large bowl, combine the diced tomatoes, minced garlic, basil, olive oil, balsamic vinegar, red pepper flakes (if using), salt, and pepper. Stir gently and let sit at room temperature for at least 15 minutes to allow flavors to develop.
  2. Cook the pasta
Bring a large pot of water to a boil. Add a generous amount of salt and the pasta. Cook according to package directions until al dente, typically 8-10 minutes. Reserve 1/2 cup of pasta cooking water before draining.
  3. Combine the pasta and tomato mixture
Drain the pasta and immediately add it to the bowl with the tomato mixture. Toss well to combine, allowing the hot pasta to slightly warm the tomatoes and release their juices. If the pasta seems dry, add a splash of the reserved pasta cooking water.
  4. Add the cheese
Add the grated Parmesan cheese and toss again until the pasta is evenly coated. The cheese will melt slightly from the heat of the pasta.
  5. Serve and garnish
Divide the pasta among serving bowls. Drizzle with additional olive oil if desired, and sprinkle with extra Parmesan cheese and fresh basil leaves. Serve immediately while still warm.
