
Braised Red Cabbage with Apples

Prepare the cabbageWash the red cabbage thoroughly, remove the tough outer leaves, and cut out the core. Slice the cabbage thinly, aiming for shreds about 1/4 inch thick. Place in a large bowl and set aside.

Sauté the aromaticsIn a large Dutch oven or heavy-bottomed pot, melt the butter over medium heat. Add the sliced onion and cook for 5-7 minutes until softened and translucent. Add the diced apples and continue cooking for another 3 minutes.

Add the cabbage and seasoningsAdd the sliced cabbage to the pot and stir to combine with the onions and apples. Pour in the apple cider vinegar and red wine (if using). Add the brown sugar, cinnamon stick, cloves, bay leaf, salt, and pepper. Stir everything together thoroughly.

Braise the cabbageReduce the heat to low, cover the pot with a tight-fitting lid, and let the cabbage braise for 45 minutes to 1 hour, stirring occasionally. The cabbage should become tender but still have some texture. If the mixture becomes too dry during cooking, add a few tablespoons of water.

Adjust the seasoningWhen the cabbage is tender, taste and adjust the seasoning. You may want to add more salt, pepper, or a touch more brown sugar or vinegar depending on your preference for sweet and sour balance. Remove and discard the cinnamon stick, cloves, and bay leaf before serving.

ServeTransfer the braised red cabbage to a serving dish. This dish can be served hot or at room temperature, and it actually improves in flavor if made a day ahead and gently reheated before serving.
