
German Bratwurst with Sauerkraut

Prepare the sausagesPrick each bratwurst several times with a fork to prevent them from bursting during cooking. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the bratwurst and brown on all sides, about 5-7 minutes. Transfer to a plate and set aside.

Sauté the aromaticsIn the same skillet, add the remaining tablespoon of oil. Add the sliced onions and cook until soft and translucent, about 5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.

Prepare the sauerkraut mixtureAdd the drained sauerkraut, grated apple, caraway seeds, beer, brown sugar, mustard, and bay leaves to the skillet. Stir to combine, and season with salt and pepper to taste. Bring the mixture to a simmer.

Cook everything togetherReturn the browned bratwurst to the skillet, nestling them into the sauerkraut mixture. Cover the skillet and reduce heat to low. Simmer for 15 minutes, until the sausages are cooked through and the flavors have melded together.

Serve the dishRemove the bay leaves from the sauerkraut. Transfer the sauerkraut to a serving platter and arrange the bratwurst on top. Serve hot with additional whole grain mustard on the side and your favorite German bread or potatoes.
