Instructions

  1. Prepare the beef mixture
In a large bowl, combine the ground beef, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently with your hands until just combined, being careful not to overwork the meat.
  2. Form the patties
Divide the meat into 8 equal portions. Form each portion into a thin patty. Place about 1 tablespoon of crumbled blue cheese in the center of 4 patties. Top each with another patty and seal the edges by pinching them together. Gently flatten to form burgers about 3/4 inch thick with the cheese sealed inside.
  3. Chill the patties
Place the formed patties on a plate, cover with plastic wrap, and refrigerate for at least 30 minutes. This helps the burgers hold their shape during cooking.
  4. Caramelize the onions
While the patties are chilling, heat olive oil in a skillet over medium heat. Add the sliced red onion and cook, stirring occasionally, until soft and caramelized, about 15-20 minutes. Remove from heat and set aside.
  5. Cook the burgers
Preheat your grill or a large skillet to medium-high heat. If using a skillet, add a tablespoon of oil. Cook the burgers for about 4-5 minutes per side for medium doneness, or adjust according to your preference. If the burgers start to puff up, press them down gently with a spatula.
  6. Toast the buns
During the last minute of cooking, place the buns cut-side down on the grill or in a separate pan to toast them lightly.
  7. Assemble the burgers
Place each cooked burger on a toasted bun bottom. Top with caramelized onions, lettuce, tomato slices, and the top bun. Serve immediately while hot.
