  1. Prepare the Reduction
    In a small saucepan, combine the white wine vinegar, white wine, and minced shallots. Bring to a boil over medium-high heat and reduce until only about 1-2 tablespoons of liquid remain, about 5-7 minutes. This concentrated reduction is the flavor base of your sauce.
  2. Lower the Heat
    Reduce the heat to low. The next steps are crucial and require gentle heat to properly emulsify the butter without breaking the sauce. If the heat is too high, the butter will separate and the sauce will fail.
  3. Incorporate the Butter
    Add the cold butter one piece at a time, whisking constantly. Wait until each piece is almost fully incorporated before adding the next. This gradual process creates a stable emulsion. Never add more than one piece of butter at a time, and make sure the butter is cold from the refrigerator.
  4. Add Finishing Touches
    Once all the butter has been incorporated, the sauce should be smooth and have a velvety consistency. Remove from heat immediately to prevent the sauce from breaking. Add the lemon juice, salt, and white pepper. If using, stir in the heavy cream to help stabilize the sauce.
  5. Strain and Serve
    For the smoothest texture, strain the sauce through a fine-mesh sieve to remove the shallot pieces. Serve immediately as the sauce does not hold well. If necessary, you can keep it warm for a short time in a thermos or over a pan of warm (not hot) water. Sprinkle with fresh herbs just before serving.
