Prepare the oven and baking sheetPreheat your oven to 275°F (135°C). Line a baking sheet with parchment paper and draw an 8-inch circle on the paper as a guide. Flip the parchment over so the pencil mark is on the bottom.

Beat the egg whitesIn a large, clean mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form. Ensure your bowl is completely free from grease or the whites won't whip properly.

Add sugar graduallyGradually add the sugar, about 1 tablespoon at a time, while continuing to beat on high speed. Beat until the meringue is stiff, glossy, and the sugar has completely dissolved (about 5-7 minutes). Test by rubbing a small amount between your fingers – it shouldn't feel grainy.

Add remaining meringue ingredientsSprinkle the cornstarch and vinegar over the meringue. Add the vanilla extract. Gently fold these ingredients into the meringue with a rubber spatula until just combined, being careful not to deflate the mixture.

Shape and bake the pavlovaSpoon the meringue onto the parchment paper, using the circle as a guide. Create a slight depression in the center where the cream and fruit will sit. Bake for 1 hour and 15 minutes, or until the outside is crisp and pale cream in color. Turn off the oven, leave the door slightly ajar, and let the pavlova cool completely in the oven (about 1-2 hours).

Prepare the whipped creamAbout 30 minutes before serving, whip the heavy cream with the powdered sugar until soft peaks form. Be careful not to overwhip the cream as it can become grainy and butter-like.

Assemble the pavlovaCarefully transfer the cooled pavlova to a serving plate. Spread the whipped cream over the depression in the pavlova. Arrange the mixed berries attractively on top of the cream, starting from the center and working your way outward.

Garnish and serveGarnish with fresh mint leaves if desired and drizzle with a small amount of honey for extra sweetness. Serve immediately for the best texture contrast between the crisp exterior, marshmallow-like interior, and fresh toppings.
