
Beef Curry Udon
Hearty Japanese noodle soup with tender beef and rich curry sauce

Prepare the ingredientsSlice the beef into thin strips. Cut the onion into thin slices and separate the white and green parts of the green onions. Julienne the carrot into thin strips. Have all ingredients ready before cooking.

Cook the udon noodlesCook the udon noodles according to package instructions. If using frozen udon, simply thaw in hot water. Drain and set aside. If using dried udon, cook until al dente, then drain and rinse under cold water.

Sauté the beef and vegetablesHeat vegetable oil in a large pot over medium-high heat. Add the beef and cook until browned, about 2-3 minutes. Add the onions and white parts of green onions, and sauté until the onions become translucent. Add the carrots and ginger, and cook for another minute.

Create the curry brothPour in the dashi stock or beef broth and bring to a simmer. Add soy sauce, mirin, and sake if using. Break the curry roux blocks into pieces and add them to the pot. Stir until the curry blocks are completely dissolved and the broth thickens, about 5 minutes.

Combine and serveAdd the cooked udon noodles to the curry broth and stir gently to combine. Make sure the noodles are heated through. Divide the curry udon among four bowls, garnish with the green parts of the green onions, and serve immediately while hot.
