  1. Prepare the potatoes
    Boil the diced potatoes in salted water for about 5-7 minutes until just tender but not mushy. Drain well and set aside.
  2. Make the filling
    Heat oil in a large pan over medium heat. Add onions and garlic, sauté until fragrant and translucent, about 3 minutes. Add ground beef and cook until browned, breaking up any lumps, about 5 minutes.
  3. Add spices
    Stir in curry powder, turmeric, and cumin. Cook for 1-2 minutes until fragrant. Add the parboiled potatoes, peas, and soy sauce. Mix well and cook for another 5 minutes. Season with salt to taste. Remove from heat and let the filling cool completely.
  4. Prepare the pastry
    Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 6 equal squares, making 12 squares total. Place 1-2 tablespoons of filling in the center of each square.
  5. Form the puffs
    Brush the edges of the pastry with water. Fold the pastry over the filling to form a triangle. Press the edges with a fork to seal. Make a small slit on top of each puff to allow steam to escape during baking.
  6. Bake the puffs
    Preheat oven to 400°F (200°C). Place the puffs on a baking sheet lined with parchment paper. Brush the tops with beaten egg for a golden finish. Bake for 20-25 minutes until puffed and golden brown.
