Prepare the brainRinse the brain under cold water. Place in a pot with enough water to cover, add vinegar, bay leaf, and 1 teaspoon salt. Bring to a simmer and cook gently for 10 minutes. Remove, drain, and cool completely.

Create the mixtureOnce cooled, cut the brain into small, even pieces about 1-inch in size. In a bowl, gently mix the brain pieces with minced garlic, chopped parsley, paprika, and black pepper.

Set up breading stationPrepare three shallow dishes: one with flour seasoned with a pinch of salt, one with beaten eggs, and one with breadcrumbs. This will be your breading assembly line.

Bread the frittersCarefully coat each piece of brain first in flour, shaking off excess, then dip in beaten egg, and finally coat thoroughly with breadcrumbs. Place the breaded pieces on a plate and let them rest for 5 minutes.

Heat the oilIn a deep, heavy-bottomed pan, heat vegetable oil to 350°F (175°C). Test the temperature by dropping a small piece of bread in the oil - it should bubble and brown in about 30 seconds.

Fry the frittersWorking in batches to avoid overcrowding, carefully lower breaded brain pieces into the hot oil. Fry for 2-3 minutes until golden brown and crispy on all sides. Remove with a slotted spoon and drain on paper towels.
