  1. Prepare the mushrooms
    Preheat the oven to 375°F (190°C). Clean the portobello mushroom caps by gently wiping them with a damp paper towel. Remove the stems and gills with a spoon. Brush both sides of the caps with 1 tablespoon of olive oil and place them gill-side up on a baking sheet lined with parchment paper.
  2. Sauté the vegetables
    Heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until translucent. Add the garlic and cook for another 30 seconds until fragrant. Add the diced red bell pepper and cook for 2-3 minutes until slightly softened. Stir in the chopped spinach and cook until wilted, about 1-2 minutes.
  3. Prepare the filling
    Remove the skillet from heat and let the vegetable mixture cool slightly. In a large bowl, combine the sautéed vegetables, breadcrumbs, cream cheese, Parmesan, mozzarella, parsley, oregano, salt, and pepper. Mix thoroughly until all ingredients are well incorporated and the mixture holds together.
  4. Stuff the mushrooms
    Divide the filling mixture evenly among the four mushroom caps, pressing down gently to fill the caps completely. Sprinkle additional Parmesan cheese on top of each stuffed mushroom.
  5. Bake the mushrooms
    Bake the stuffed mushrooms in the preheated oven for 20-25 minutes, until the mushrooms are tender and the tops are golden brown and crispy. The internal temperature should reach 165°F (74°C) to ensure they're fully cooked.
  6. Serve
    Remove the stuffed mushrooms from the oven and let them rest for 5 minutes before serving. This allows the flavors to settle and prevents burning your mouth. Garnish with additional fresh parsley if desired and serve hot as a main dish or appetizer.
