Instructions

  1. Marinate the shrimp
In a medium bowl, combine shrimp with olive oil, lime juice, minced garlic, chili powder, cumin, and a pinch of salt. Toss to coat evenly and let marinate for 10 minutes while preparing other ingredients.
  2. Prepare the tortillas
Preheat oven to 400°F (200°C). Arrange corn tortillas in a single layer on a baking sheet. Lightly brush both sides with olive oil. Bake for 8-10 minutes, flipping halfway through, until crisp and golden brown. Remove from oven and set aside.
  3. Cook the shrimp
Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from heat and roughly chop half the shrimp, leaving the rest whole for presentation.
  4. Prepare the cream sauce
In a small bowl, whisk together the Mexican crema or sour cream with a squeeze of lime juice and a pinch of salt. If desired, add a dash of hot sauce for extra heat. Set aside.
  5. Assemble the tostadas
Place the crispy tortillas on serving plates. Spread a thin layer of the cream sauce on each tortilla. Top with shredded cabbage, followed by the cooked shrimp, avocado slices, and pico de gallo.
  6. Add the final touches
Sprinkle each tostada with crumbled Cotija or feta cheese and chopped cilantro. Drizzle with additional cream sauce if desired. Serve immediately with lime wedges and hot sauce on the side.
