  1. Prepare the beans and grains
    Drain the soaked white beans and chickpeas. In a large pot, combine the wheat berries, beans, and chickpeas with 8 cups of water. Bring to a boil, then reduce heat and simmer until the beans and wheat are tender, about 45-60 minutes. Add more water if needed during cooking.
  2. Cook the rice
    In a separate small pot, cook the rice in 1 cup of water until tender and the water is absorbed, about 15-20 minutes. Set aside.
  3. Add sweetener and spices
    Once the wheat and beans are tender, add the sugar, cinnamon, and cloves to the pot. Stir well until the sugar dissolves completely. Simmer for another 10 minutes.
  4. Incorporate dried fruits
    Add the chopped dried apricots, raisins, and figs to the pot. Continue to simmer for about 15 minutes, until the fruits soften and plump up.
  5. Combine everything
    Stir in the cooked rice and rose water. Remove from heat and let the mixture cool slightly. The pudding will thicken as it cools.
  6. Add nuts
    Once the pudding has cooled slightly but is still warm, gently fold in most of the walnuts, hazelnuts, and pistachios, reserving some for garnish.
  7. Serve and garnish
    Ladle the asure into individual serving bowls. Garnish with the reserved nuts, a sprinkle of cinnamon, and pomegranate seeds on top. Serve warm or chilled.
