
Asparagus and Prosciutto Bundles
Elegant appetizer of wrapped asparagus with balsamic glaze

Prepare the asparagusBring a large pot of salted water to a boil. Add asparagus and blanch for 2 minutes until bright green and slightly tender. Immediately transfer to an ice bath to stop cooking. Once cooled, pat dry with paper towels.

Prepare the dressingIn a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and half of the black pepper. Set aside.

Assemble the bundlesArrange 2 asparagus spears side by side and wrap a piece of prosciutto around the middle, creating a bundle. Repeat with remaining asparagus and prosciutto to make 12 bundles total.

Cook the bundlesHeat a large non-stick skillet over medium heat. Place the bundles in the skillet and cook for about 2 minutes per side, until the prosciutto becomes slightly crisp and the asparagus is heated through.

Plate and serveArrange the bundles on a serving platter. Drizzle with the prepared dressing and balsamic glaze. Sprinkle with Parmigiano-Reggiano cheese, remaining black pepper, chives, and pine nuts if using. Serve immediately while warm.
