Prepare the batterIn a large bowl, whisk together the flour, baking powder, sugar, salt, and cardamom. In a separate bowl, whisk the egg yolks, buttermilk, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Whip the egg whitesIn a clean bowl, beat the egg whites with an electric mixer until stiff peaks form. Gently fold the whipped egg whites into the batter until incorporated, being careful not to deflate the mixture. Fold in diced apple if using.

Heat the panPlace an aebleskiver pan over medium heat. When hot, brush each cup generously with melted butter. The pan is ready when a drop of water sizzles on the surface.

Cook the aebleskiverFill each cup about three-quarters full with batter. Cook for about 2 minutes until bubbles form on the surface and the edges begin to set. Using a knitting needle, wooden skewer, or fork, carefully turn each aebleskiver about a quarter turn.

Continue turningAllow to cook for another minute, then turn another quarter turn. Continue this process until the aebleskiver are golden brown all over and cooked through, about 5-6 minutes total per batch.

Keep warmTransfer cooked aebleskiver to a baking sheet and keep warm in a 200°F (95°C) oven while cooking the remaining batches. Repeat the cooking process with the remaining batter, adding more butter to the pan as needed.

ServeDust the warm aebleskiver with powdered sugar and serve immediately with jam, maple syrup, or your favorite toppings.
