Prepare the jackfruitDrain and rinse the canned jackfruit thoroughly. Using your hands or two forks, pull apart the jackfruit pieces to create a shredded texture similar to pulled pork. Remove any tough core pieces and discard.

Sauté the aromaticsHeat olive oil in a large skillet over medium heat. Add the diced onion and cook for 4-5 minutes until softened and translucent. Add minced garlic and cook for another 30 seconds until fragrant.

Cook the jackfruitAdd the shredded jackfruit to the skillet with onions and garlic. Cook for about 5 minutes, stirring occasionally to allow the jackfruit to slightly brown and develop flavor.

Add BBQ flavoringStir in barbecue sauce, smoked paprika, brown sugar, liquid smoke (if using), and cumin. Season with salt and pepper to taste. Reduce heat to medium-low and simmer for 15 minutes, stirring occasionally to prevent sticking and allowing the jackfruit to absorb the flavors.

Create pulled textureUsing a potato masher or two forks, mash and pull apart the jackfruit pieces further as they cook to create an authentic pulled meat-like texture. If the mixture becomes too dry, add a splash of water or more barbecue sauce.

Assemble the slidersLightly toast the slider buns. Place a generous spoonful of the BBQ jackfruit mixture on the bottom half of each bun. Top with coleslaw and pickled jalapeños if desired.

Finish and serveDrizzle with additional barbecue sauce if desired and sprinkle with fresh cilantro. Place the top bun on each slider and secure with a toothpick if needed. Serve immediately while warm.
