  1. Prepare the meat
    Heat the vegetable oil in a large pot over medium heat. Add the beef brisket and cook until browned on all sides, about 5-7 minutes. Remove and set aside. In the same pot, briefly sauté the sliced kielbasa and diced ham for 2-3 minutes to release their flavors.
  2. Create the flavor base
    Add the chopped onions to the pot and sauté until translucent, about 5 minutes. Add the grated carrots and continue cooking for another 3 minutes. Stir in the tomato paste and cook for 2 minutes to caramelize slightly.
  3. Build the soup
    Return the beef to the pot and add the beef broth. Bring to a boil, then reduce heat to simmer. Add bay leaves and let cook for about 40 minutes until the beef is tender.
  4. Add the pickled components
    Add the diced pickles, black olives, and capers to the soup. Simmer for another 15 minutes to allow the flavors to meld together.
  5. Finish the soup
    Just before serving, add the sliced lemon (or squeeze the juice in, depending on preference) and adjust seasoning with salt and pepper if needed. Remove bay leaves.
  6. Serve
    Ladle the hot solyanka into bowls. Top each serving with a dollop of sour cream and sprinkle with freshly chopped dill. Serve with dark rye bread on the side if desired.
