Ukrainian Solyanka
Rich and tangy meat soup with pickles and olives
Ingredients
Instructions
-
Prepare the meatHeat the vegetable oil in a large pot over medium heat. Add the beef brisket and cook until browned on all sides, about 5-7 minutes. Remove and set aside. In the same pot, briefly sauté the sliced kielbasa and diced ham for 2-3 minutes to release their flavors.
-
Create the flavor baseAdd the chopped onions to the pot and sauté until translucent, about 5 minutes. Add the grated carrots and continue cooking for another 3 minutes. Stir in the tomato paste and cook for 2 minutes to caramelize slightly.
-
Build the soupReturn the beef to the pot and add the beef broth. Bring to a boil, then reduce heat to simmer. Add bay leaves and let cook for about 40 minutes until the beef is tender.
-
Add the pickled componentsAdd the diced pickles, black olives, and capers to the soup. Simmer for another 15 minutes to allow the flavors to meld together.
-
Finish the soupJust before serving, add the sliced lemon (or squeeze the juice in, depending on preference) and adjust seasoning with salt and pepper if needed. Remove bay leaves.
-
ServeLadle the hot solyanka into bowls. Top each serving with a dollop of sour cream and sprinkle with freshly chopped dill. Serve with dark rye bread on the side if desired.
