
Turkey Stuffed Shells
Jumbo pasta shells filled with savory turkey and cheese

Cook the pasta shellsBring a large pot of salted water to a boil. Cook jumbo pasta shells according to package directions until al dente (usually 9-11 minutes). Drain and rinse with cold water to stop cooking. Set aside on a baking sheet to prevent sticking.

Prepare the fillingHeat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 3-4 minutes. Add garlic and cook for 30 seconds until fragrant. Add ground turkey and cook until browned and no longer pink, breaking it up with a wooden spoon, about 5-7 minutes. Season with salt and pepper. Remove from heat and let cool slightly.

Make the cheese mixtureIn a large bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, 1/4 cup Parmesan cheese, beaten egg, parsley, and Italian seasoning. Add the cooled turkey mixture and stir until well combined.

Prepare the baking dishPreheat oven to 375°F (190°C). Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish.

Stuff the shellsFill each pasta shell with about 2 tablespoons of the turkey and cheese mixture. Arrange the stuffed shells in the prepared baking dish, open side up.

Add sauce and cheesePour the remaining 1 1/2 cups of marinara sauce over the stuffed shells. Sprinkle with the remaining 1/2 cup mozzarella cheese and 1/4 cup Parmesan cheese.

Bake the shellsCover the baking dish with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden brown.

ServeLet stand for 5 minutes before serving. Garnish with additional chopped fresh parsley if desired.
