  1. Prepare the potatoes
    Place diced potatoes in a large pot and cover with cold water. Add 1 teaspoon salt. Bring to a boil and cook for 5-7 minutes until potatoes are just fork-tender but not falling apart. Drain well and set aside.
  2. Cook the vegetables
    Heat 1 tablespoon butter and 1 tablespoon olive oil in a large cast-iron skillet or heavy-bottomed pan over medium heat. Add onions and cook for 3-4 minutes until softened. Add bell peppers and garlic, cooking for another 2 minutes until fragrant.
  3. Add potatoes and seasonings
    Add the remaining butter and olive oil to the pan. Increase heat to medium-high and add parboiled potatoes. Season with thyme, paprika, sage, salt, and pepper. Allow potatoes to cook undisturbed for 3-4 minutes to develop a golden crust, then flip and continue cooking for another 3-4 minutes.
  4. Add the turkey
    Gently fold in the diced turkey, being careful not to break up the potatoes too much. Cook for 5-7 minutes, occasionally stirring until the turkey is heated through and slightly crispy on the edges.
  5. Create texture contrast
    Press down on the hash with a spatula to create a more even layer. Allow to cook undisturbed for 2-3 minutes to create a crispy bottom layer. If desired, use the spatula to flip portions of the hash to ensure even browning.
  6. Serve immediately
    If desired, create 4 wells in the hash and crack an egg into each. Cover the skillet and cook for 3-4 minutes until eggs reach desired doneness. Garnish with fresh parsley and serve immediately.
