
Tsukemono Pickles
Traditional Japanese quick-pickled vegetables

Prepare the vegetablesWash all vegetables thoroughly. Slice cucumbers, daikon, and carrots into thin, uniform pieces. Roughly chop the napa cabbage into bite-sized pieces. Place all vegetables in a large bowl.

Salt the vegetablesSprinkle the sea salt over the vegetables and mix well with your hands, gently massaging the salt into the vegetables. Let the vegetables sit for about 30 minutes until they release water and begin to soften.

Rinse and drainTransfer the vegetables to a colander and rinse thoroughly under cold water to remove excess salt. Gently squeeze out as much water as possible from the vegetables and place them in a clean bowl.

Prepare the pickling liquidIn a small saucepan, combine the rice vinegar, mirin, sugar, and soy sauce. Heat over medium heat until the sugar dissolves completely, about 3-5 minutes. Remove from heat and let cool to room temperature.

Combine and picklePour the cooled pickling liquid over the prepared vegetables. Add the kombu and sliced chili pepper (if using). Toss well to ensure all vegetables are coated with the pickling liquid.

RefrigerateTransfer the mixture to an airtight container. Press the vegetables down so they are submerged in the pickling liquid. Refrigerate for at least 3 hours, though overnight is preferable for the best flavor development.

ServeRemove from refrigerator, discard the kombu, and garnish with toasted sesame seeds before serving. Tsukemono pickles can be served cold as a side dish with rice, grilled meats, or as part of a traditional Japanese meal.
