  1. Sauté the vegetables
    Heat olive oil in a large pot over medium heat. Add diced onion and bell peppers and cook until softened, about 5 minutes. Add minced garlic and cook for another 30 seconds until fragrant.
  2. Add the spices
    Stir in the chili powder, cumin, and oregano. Cook for 1 minute, stirring constantly to prevent burning and to toast the spices slightly, which enhances their flavor.
  3. Combine all ingredients
    Add the three types of beans, diced tomatoes with their juice, tomato paste, and vegetable broth. Stir well to combine all ingredients and dissolve the tomato paste into the liquid.
  4. Simmer the chili
    Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally to prevent sticking to the bottom of the pot.
  5. Adjust seasonings
    Remove lid and simmer for an additional 10-15 minutes to thicken the chili to your desired consistency. Taste and adjust seasoning with salt and pepper as needed.
  6. Serve and garnish
    Ladle the chili into bowls and serve hot. Optional garnishes include shredded cheese, sour cream, diced avocado, chopped cilantro, sliced jalapeños, or crushed tortilla chips.
