
Thai Taro in Coconut Milk

Prepare the taroThoroughly wash, peel, and cut the taro root into 1-inch cubes. Rinse the cubes several times under cold water to remove excess starch, then drain well.

Pre-boil the taroIn a medium pot, bring water to a boil and add the taro cubes. Boil for about 5-7 minutes or until they're halfway cooked but still firm. Drain and set aside.

Prepare the coconut baseIn a large pot, combine 1 can of coconut milk with 1 cup of water. Add sugar, salt, and pandan leaves if using. Bring to a gentle simmer over medium heat, stirring occasionally until sugar dissolves completely.

Cook the taroAdd the pre-boiled taro cubes to the coconut mixture. Simmer gently for about 10-15 minutes, or until the taro is tender but not mushy. Stir occasionally to prevent sticking.

Add richness and flavorPour in the remaining can of coconut milk and vanilla extract if using. Continue to simmer for another 3-5 minutes. For a thicker consistency, slowly stir in the tapioca starch mixture while the liquid is simmering.

Taste and adjustTaste the dessert and adjust sweetness or saltiness as needed. The balance between sweet and salty is crucial for authentic Thai flavor. Remove pandan leaves before serving.

Serve and garnishLadle the warm dessert into serving bowls. Sprinkle with toasted sesame seeds and coconut meat slivers if desired. Serve immediately while warm, or chill for a refreshing cold dessert.
