Instructions

  1. Prepare the sauce
In a small bowl, combine the oyster sauce, fish sauce, palm sugar, soy sauce, and cornstarch mixture. Stir until the sugar dissolves and set aside.
  2. Cook the pork
Heat 2 tablespoons of oil in a large wok or skillet over high heat. Add the sliced pork and stir-fry for 3-4 minutes until browned and nearly cooked through. Remove the pork from the wok and set aside.
  3. Stir-fry the vegetables
Add the remaining tablespoon of oil to the wok. Add the garlic and stir-fry for 30 seconds until fragrant. Add the bell peppers, snow peas, and onion. Stir-fry for 2-3 minutes until the vegetables are crisp-tender.
  4. Combine and sauce
Return the pork to the wok with the vegetables. Pour in the prepared sauce and stir-fry for 2 minutes until the sauce thickens and coats the ingredients evenly.
  5. Add finishing touches
Remove the wok from heat. Stir in the lime juice and Thai basil leaves, tossing until the basil begins to wilt slightly from the residual heat.
  6. Serve
Transfer the stir-fry to a serving platter, garnish with sliced scallions, and serve immediately with steamed jasmine rice.
