  1. Prepare the dressing
    In a small bowl, combine the fish sauce, lime juice, and palm sugar. Stir until the sugar dissolves completely. Add the chopped chilies and mix well. Set aside to allow flavors to meld.
  2. Prepare the herbs and vegetables
    Wash all herbs thoroughly and pat dry with paper towels. Tear larger leaves into bite-sized pieces. Slice cucumber, halve cherry tomatoes, thinly slice red onion, and julienne the carrot.
  3. Combine the salad ingredients
    In a large mixing bowl, combine all the herbs, cucumber, cherry tomatoes, red onion, carrot, and thinly sliced lemongrass. Toss gently to mix the ingredients evenly.
  4. Add the dressing
    Pour the prepared dressing over the salad mixture. Toss gently but thoroughly to ensure all ingredients are coated with the dressing. The herbs should begin to slightly wilt from the dressing.
  5. Finish and garnish
    Transfer the salad to a serving plate or individual plates. Sprinkle with the chopped peanuts and finely sliced kaffir lime leaf. Serve immediately while the herbs are still fresh and crisp.
