  1. Prepare the sushi rice
    Cook the rinsed rice with 2 cups of water in a rice cooker or pot until tender. While the rice is still hot, mix rice vinegar, sugar, and salt in a small bowl until dissolved, then fold this mixture gently into the rice. Allow to cool to room temperature.
  2. Make the egg mixture
    In a bowl, beat the eggs thoroughly. Add mirin, sugar, soy sauce, and dashi powder if using. Mix well until sugar is completely dissolved. Strain the mixture through a fine sieve to remove any lumps.
  3. Cook the tamago (Japanese omelette)
    Heat a rectangular tamagoyaki pan or a regular non-stick skillet over medium heat. Lightly oil the surface. Pour a thin layer of egg mixture and allow it to set slightly. Roll it up from one side to the other. Move the rolled egg to one side, re-oil the pan, and repeat with another layer, rolling it together with the first layer. Continue this process until all the egg mixture is used.
  4. Shape the tamago
    Allow the tamago to cool slightly, then slice it into 8 rectangular pieces about 1/2 inch thick. The slices should be slightly wider than your intended nigiri base.
  5. Form the nigiri
    Wet your hands with water to prevent sticking. Take about 2 tablespoons of sushi rice and gently compress it into an oval shape in your palm. Place a small dab of wasabi on top of the rice if desired.
  6. Assemble the nigiri
    Place a slice of tamago on top of each rice ball. Gently press the tamago onto the rice, maintaining the oval shape. The tamago should slightly overhang the rice on both ends.
  7. Serve the tamago nigiri
    Arrange the tamago nigiri on a serving plate. Serve immediately with additional wasabi and soy sauce on the side for dipping if desired.
