  1. Prepare the sweet potatoes
    Place sweet potato chunks in a large pot and cover with water. Bring to a boil over high heat, then reduce to medium-high. Cook for 15-20 minutes until fork-tender. Drain well and return to the pot.
  2. Make the sweet potato mixture
    Preheat oven to 350°F (175°C). Mash the cooked sweet potatoes until smooth. Add melted butter, milk, ½ cup brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix thoroughly until well combined and smooth.
  3. Prepare the baking dish
    Transfer the sweet potato mixture to a greased 9x13 inch baking dish, spreading it evenly with a spatula.
  4. Make the pecan streusel topping
    In a medium bowl, combine the remaining ¼ cup brown sugar, chopped pecans, and flour. Using your fingers or a pastry cutter, work the cold cubed butter into the mixture until it resembles coarse crumbs.
  5. Add the topping
    Sprinkle the pecan streusel topping evenly over the sweet potato mixture, covering the entire surface.
  6. Bake the casserole
    Bake in the preheated oven for 40-45 minutes, until the topping is golden brown and the edges are bubbling slightly.
  7. Rest and serve
