Prepare the milk mixtureIn a large, heavy-bottomed saucepan, bring the milk and salt to a gentle simmer over medium heat. Stir occasionally to prevent the milk from scorching on the bottom.

Cook the polentaOnce the milk is simmering, slowly pour in the polenta in a steady stream while whisking continuously to prevent lumps from forming. Reduce the heat to low and continue to cook, stirring frequently with a wooden spoon, for about 15-20 minutes until the polenta is thick and creamy.

Add sweetness and flavorOnce the polenta has thickened, stir in the butter, honey, and vanilla extract until completely incorporated. The mixture should be smooth and have a porridge-like consistency. If it becomes too thick, add a splash of warm milk to thin it out.

Prepare the berriesWhile the polenta is cooking, gently mix the strawberries, blueberries, and raspberries in a bowl. Set aside half of the berries for topping and lightly mash the remaining half with a fork to release some of their juices.

Assemble the dishDivide the warm polenta among four serving bowls. Top each bowl with a portion of the mashed berries, followed by the whole berries. Sprinkle with toasted almond slices and chopped mint leaves.
