  1. Prepare the banana leaves
    Wash the banana leaves thoroughly and wipe them dry. Pass each leaf quickly over an open flame or hot stovetop until it becomes pliable and changes color slightly. This prevents the leaves from cracking when folded. Cut into 8x10 inch rectangles and set aside.
  2. Mix the rice mixture
    Drain the soaked glutinous rice. In a large bowl, combine the rice, coconut milk, granulated sugar, lye water, and salt. Mix well until all ingredients are fully incorporated and the sugar is dissolved.
  3. Prepare the wrapping
    Place about 3-4 tablespoons of the rice mixture in the center of each banana leaf. Fold the sides of the leaf inward to create a rectangular package, then fold the ends to seal. Secure the package by tying it with kitchen twine or strips of banana leaf. Repeat this process with the remaining rice mixture and banana leaves.
  4. Cook the suman
    Place the wrapped suman in a large pot and add enough water to cover them completely. Bring the water to a boil, then reduce heat to medium-low and simmer for about 1 hour and 30 minutes, or until the rice is fully cooked and has a sticky consistency.
  5. Cool and serve
    Remove the suman from the pot and let them cool completely. Once cooled, unwrap the suman from the banana leaves. Serve with a sprinkle of toasted coconut flakes and a side of brown sugar for dipping or drizzling.
