Prepare the marinadeIn a food processor or blender, combine garlic, lemongrass, ginger, fish sauce, soy sauce, oil, palm sugar, lime juice, chilies, cilantro, ground coriander, and turmeric. Blend until smooth to form a thick marinade paste.

Marinate the chickenPlace chicken thighs in a large ziplock bag or shallow dish. Pour the marinade over the chicken, making sure all pieces are well coated. Seal or cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Prepare the grillPreheat your grill to medium heat (around 350°F/175°C). If using charcoal, arrange coals for indirect cooking. Oil the grates to prevent sticking.

Grill the chickenRemove chicken from marinade, shaking off excess. Place chicken skin-side down on the grill. Grill for about 10-12 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and slightly charred.
