  1. Prepare the grill
    Preheat your grill to medium-high heat (about 400°F/200°C). Clean and oil the grates to prevent sticking.
  2. Prepare the corn
    Brush each ear of corn with vegetable oil to prevent sticking and help with charring. Season lightly with salt and pepper.
  3. Grill the corn
    Place corn directly on the grill grates. Grill for 8-10 minutes, turning occasionally, until corn is tender and has charred spots all around.
  4. Make the spicy coating
    While corn is grilling, in a bowl, mix together mayonnaise, Mexican crema, minced garlic, lime juice, chili powder, cayenne pepper, and cumin until well combined.
  5. Assemble the elotes
    Once corn is done, let it cool slightly. Using a brush or knife, coat each ear of corn generously with the spicy mayo mixture. Make sure to cover all sides.
  6. Add toppings
    Roll each coated ear of corn in crumbled cotija cheese, pressing gently to adhere. Sprinkle with additional chili powder and chopped cilantro.
  7. Serve
    Transfer to a serving platter. Garnish with additional cotija cheese, cilantro, and serve immediately with lime wedges for squeezing over the top.
