Grilled Mexican street corn with creamy chili-lime coating

Prepare the grillPreheat your grill to medium-high heat (about 400°F/200°C). Clean and oil the grates to prevent sticking.

Prepare the cornBrush each ear of corn with vegetable oil to prevent sticking and help with charring. Season lightly with salt and pepper.

Grill the cornPlace corn directly on the grill grates. Grill for 8-10 minutes, turning occasionally, until corn is tender and has charred spots all around.

Make the spicy coatingWhile corn is grilling, in a bowl, mix together mayonnaise, Mexican crema, minced garlic, lime juice, chili powder, cayenne pepper, and cumin until well combined.

Assemble the elotesOnce corn is done, let it cool slightly. Using a brush or knife, coat each ear of corn generously with the spicy mayo mixture. Make sure to cover all sides.

Add toppingsRoll each coated ear of corn in crumbled cotija cheese, pressing gently to adhere. Sprinkle with additional chili powder and chopped cilantro.

ServeTransfer to a serving platter. Garnish with additional cotija cheese, cilantro, and serve immediately with lime wedges for squeezing over the top.
