  1. Prepare the crust
    Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Bake for 10 minutes, then remove and cool completely.
  2. Make the squash puree
    If using fresh butternut squash, peel, seed and cut it into 1-inch cubes. Steam until very tender, about 15-20 minutes. Drain well and puree in a food processor until smooth. Let cool completely before using. If using canned pumpkin, simply measure out 2 cups.
  3. Mix the filling
    In a large bowl, beat cream cheese until smooth and fluffy, about 3 minutes. Add both sugars and beat until combined. Add squash puree, sour cream, vanilla, flour, and all spices. Beat on medium speed until completely smooth, scraping down the sides of the bowl as needed.
  4. Add eggs
    Add eggs one at a time, beating on low speed just until each is incorporated. Do not overmix after adding eggs as this can cause the cheesecake to crack. Pour the filling into the cooled crust.
  5. Prepare water bath
    Wrap the outside of the springform pan with a double layer of aluminum foil, covering the bottom and sides. Place the pan in a large roasting pan. Pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan.
  6. Bake the cheesecake
    Bake at 350°F (175°C) for about 55-65 minutes, or until the edges are set but the center still jiggles slightly when shaken. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
  7. Cool and chill
    Remove the cheesecake from the water bath and foil. Run a knife around the edge of the pan to loosen the cheesecake. Let cool at room temperature for 2 hours, then cover and refrigerate for at least 6 hours or overnight.
  8. Serve
    Remove the sides of the springform pan. If desired, garnish with whipped cream, a sprinkle of cinnamon, or candied pecans before serving. Slice with a clean, warm knife for neat portions.
