  1. Prepare the couscous
    In a medium saucepan, bring vegetable broth to a boil. Remove from heat, add couscous, stir, cover, and let stand for 5 minutes. Fluff with a fork and set aside to cool slightly.
  2. Spice the chickpeas
    Heat olive oil in a large skillet over medium heat. Add chickpeas, harissa paste, cumin, smoked paprika, coriander, and cinnamon. Cook, stirring frequently, until chickpeas are heated through and lightly crispy, about 8-10 minutes.
  3. Prepare the vegetables
    While the chickpeas are cooking, prepare the cucumber, tomatoes, and red onion. Place in a bowl and toss with a pinch of salt to draw out flavors.
  4. Make the lemon dressing
    In a small bowl, whisk together 3 tablespoons olive oil, juice of one lemon, 1 minced garlic clove, salt and pepper to taste. This will be drizzled over the assembled bowls.
  5. Assemble the bowls
    Divide the couscous among four bowls. Top each with a portion of the spiced chickpeas, vegetable mixture, chopped mint, and crumbled feta cheese.
  6. Finish and serve
    Drizzle each bowl with the prepared lemon dressing and garnish with additional mint leaves if desired. Serve with lemon wedges on the side for an extra citrus kick.
