Prepare the doughIn a large mixing bowl, beat the softened butter and brown sugar until light and fluffy, about 3 minutes. Add the egg and vanilla extract, mixing until well combined.

Add dry ingredientsIn a separate bowl, whisk together the flour, speculaas spice mix, baking soda, and salt. Gradually add this dry mixture to the butter mixture, alternating with the milk, until a soft dough forms.

Chill the doughDivide the dough into two portions, flatten into discs, wrap in plastic wrap, and refrigerate for at least 1 hour or overnight. This helps the spices to develop their flavors and makes the dough easier to handle.

Roll and cutPreheat your oven to 350°F (175°C) and line baking sheets with parchment paper. On a lightly floured surface, roll out the dough to about 1/8-inch thickness. If using wooden molds, dust them with flour and press firmly onto the dough. Otherwise, use cookie cutters to cut shapes. If decorating with almonds, press them gently into the cookies.

Bake the cookiesPlace the cookies on the prepared baking sheets, leaving about 1 inch between them. Bake for 12-15 minutes, or until the edges are golden brown. The centers will still be slightly soft but will firm up as they cool.

Cool and storeAllow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container for up to 2 weeks. The flavor actually improves after a day or two.
