  1. Prepare the chicken
    Season chicken breasts with salt, pepper, and 1 teaspoon of southwest seasoning. Grill over medium-high heat for 6-7 minutes per side, or until internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing into thin strips.
  2. Make the dressing
    In a small bowl, whisk together lime juice, olive oil, honey, remaining southwest seasoning, salt, and pepper until well combined. Set aside to allow flavors to meld.
  3. Prepare the vegetables
    If using fresh corn, cut kernels from the cob. If using frozen corn, ensure it's fully thawed. Dice the bell pepper, slice the red onion, halve the cherry tomatoes, and chop the cilantro. Dice the avocado just before assembling to prevent browning.
  4. Assemble the salad base
    In a large salad bowl, layer the mixed greens or romaine lettuce. Top with black beans, corn, bell pepper, red onion, and cherry tomatoes.
  5. Add protein and toppings
    Arrange the sliced grilled chicken on top of the vegetable mixture. Sprinkle with shredded cheese, diced avocado, and chopped cilantro.
  6. Dress and serve
    Drizzle the prepared lime-southwest dressing over the salad just before serving. Alternatively, serve the dressing on the side so each person can add their desired amount. Toss gently to combine all ingredients if preferred.
