  1. Prepare the bread
    Soak the bread in milk, then squeeze out excess liquid and set aside. Preheat the oven to 350°F (175°C).
  2. Sauté the aromatics
    Heat oil in a large skillet over medium heat. Add onions and sauté until soft and translucent, about 5 minutes. Add garlic and cook for another minute until fragrant.
  3. Cook the meat mixture
    Add ground meat to the skillet and cook until browned, breaking it up with a wooden spoon. Stir in curry powder and turmeric, cooking for 2 minutes to release the flavors.
  4. Add the sweet and tangy elements
    Mix in the soaked bread, apricot jam, chutney, lemon juice, raisins, and almonds. Season with salt and pepper to taste. Simmer for 5-10 minutes, allowing flavors to meld together.
  5. Transfer and prepare for baking
    Transfer the meat mixture to a greased ovenproof dish, spreading it evenly. Press bay leaves into the mixture. Smooth the top with the back of a spoon.
  6. Prepare the custard topping
    Beat eggs and milk together in a bowl. Season with a pinch of salt and pepper. Carefully pour this custard mixture over the meat.
  7. Bake the bobotie
    Place in the preheated oven and bake uncovered for 35-45 minutes until the custard topping is set and golden brown.
  8. Serve
    Let rest for 5 minutes before serving. Traditionally served with yellow rice, chutney, and a fresh tomato and onion sambal.
