  1. Prepare the ribs
    Rinse the rib racks under cold water and pat dry with paper towels. Remove the thin membrane from the back of each rack by sliding a knife under the membrane and then pulling it off with a paper towel for better grip. This improves flavor absorption and tenderness.
  2. Make the dry rub
    In a small bowl, combine brown sugar, paprika, black pepper, kosher salt, garlic powder, onion powder, cayenne pepper, and dried thyme. Mix thoroughly until all ingredients are evenly distributed.
  3. Season the ribs
    Apply the dry rub generously to both sides of the rib racks, massaging it into the meat. For deeper flavor, wrap the seasoned ribs in plastic wrap and refrigerate for at least 2 hours or preferably overnight.
  4. Prepare the smoker
    Preheat your smoker to 225°F (107°C). Add the soaked wood chips to the smoker box or directly onto charcoal according to your smoker's instructions. Fill a spray bottle with apple juice or cider for later use.
  5. Smoke the ribs
    Place the ribs on the smoker rack, bone side down. Close the lid and maintain a consistent temperature between 225-250°F (107-121°C). Smoke for about 3 hours, spraying the ribs with apple juice every 45 minutes to keep them moist.
  6. Wrap the ribs
    After 3 hours, remove the ribs and place each rack on a large piece of heavy-duty aluminum foil. Pour a small amount of apple juice over each rack, then wrap tightly, sealing all edges to create a leak-proof package. Return to the smoker for another 2 hours.
  7. Finish and glaze
    Carefully unwrap the ribs (watch for hot steam) and place them back on the smoker rack. If using barbecue sauce, brush it onto both sides of the ribs now. Smoke for an additional 30 minutes until the sauce is set and slightly caramelized.
  8. Rest and serve
    Remove the ribs from the smoker and let them rest for 10-15 minutes. Slice between the bones and serve hot with extra barbecue sauce on the side if desired. The meat should be tender but still attached to the bone, with a slight pull when you take a bite.
