  1. Season the brisket
    In a small bowl, mix together the salt, pepper, paprika, and thyme. Rub this mixture all over the brisket, covering all sides thoroughly. Let the brisket sit at room temperature for 15-20 minutes to allow the seasonings to penetrate the meat.
  2. Sear the meat
    Heat olive oil in a large skillet over medium-high heat. Once hot, add the brisket and sear on all sides until nicely browned, about 3-4 minutes per side. This step creates a flavorful crust and helps lock in juices during the slow cooking process.
  3. Prepare the slow cooker
    Place sliced onions, carrots, and celery at the bottom of the slow cooker. This vegetable bed will lift the brisket slightly and add flavor to the cooking liquid. Place the seared brisket on top of the vegetables, fat side up.
  4. Make the cooking liquid
    In a medium bowl, whisk together beef broth, tomato paste, Worcestershire sauce, brown sugar, and minced garlic until well combined. Pour this mixture over the brisket in the slow cooker. Add bay leaves to the liquid.
  5. Slow cook the brisket
    Cover the slow cooker and cook on low for 8-10 hours, or until the brisket is very tender and easily pulls apart with a fork. For the best texture, avoid cooking on high as slower cooking yields more tender meat.
  6. Rest the meat
    Once done, carefully transfer the brisket to a cutting board and tent loosely with aluminum foil. Let it rest for 20 minutes before slicing to allow the juices to redistribute throughout the meat.
  7. Prepare the sauce
    While the meat is resting, strain the cooking liquid into a saucepan, discarding the bay leaves but keeping the vegetables if desired. Bring the liquid to a simmer over medium heat and reduce for about 10 minutes until slightly thickened. Taste and adjust seasonings if needed.
  8. Slice and serve
    Slice the brisket against the grain into thin slices (about 1/4 inch thick). Arrange the sliced meat on a platter with the cooked vegetables, and drizzle with the reduced sauce. Serve with additional sauce on the side.
