Instructions

  1. Prepare the skillet
Heat a large cast-iron skillet over medium heat. Add butter and oil, allowing the butter to melt completely.
  2. Sauté the vegetables
Add diced onions to the skillet and cook until translucent, about 3-4 minutes. Add the red bell peppers and continue cooking for another 2 minutes until slightly softened.
  3. Add potatoes and seasonings
Add the diced potatoes to the skillet, spreading them in an even layer. Let them cook undisturbed for 5-7 minutes until the bottom begins to crisp. Season with thyme, black pepper, and paprika.
  4. Incorporate corned beef
Add the chopped corned beef and minced garlic to the skillet. Stir to combine with the potatoes and vegetables. Drizzle with Worcestershire sauce and mix well.
  5. Create a crispy texture
Press the mixture firmly into the skillet with a spatula. Cook undisturbed for 4-5 minutes to develop a crispy crust on the bottom. Flip sections of the hash or stir to crisp other sides for another 3-4 minutes.
  6. Optional egg preparation
If serving with eggs, create 4-6 wells in the hash mixture. Crack an egg into each well, cover the skillet, and cook until eggs reach desired doneness, about 3-5 minutes.
  7. Final seasoning and serving
Taste and adjust salt as needed (corned beef is already salty). Garnish with fresh chopped parsley and serve immediately while hot and crispy.
