
Scandinavian Berry Compote
Sweet-tart Nordic berry sauce perfect for breakfast or dessert

Prepare the berriesRinse all the berries thoroughly if using fresh. If using frozen berries, allow them to thaw slightly. Remove any stems or leaves. For strawberries, hull and cut them into halves or quarters depending on size.

Combine berries and sweetenersIn a large, heavy-bottomed saucepan, combine all the berries, sugar, and honey. Stir gently to avoid crushing the berries too much. Let stand for 10 minutes to allow the berries to release some of their juices.

Add flavorings and simmerAdd the lemon juice, cinnamon stick, cardamom pods, and vanilla bean (if using) to the saucepan. Bring the mixture to a gentle simmer over medium heat, stirring occasionally. Reduce heat to medium-low and simmer for 10-12 minutes, until the berries have softened but still maintain some shape.

Thicken the compoteRemove the cinnamon stick, cardamom pods, and vanilla bean. Stir the cornstarch mixture again to ensure it's well combined, then slowly pour it into the simmering berry mixture while stirring constantly. Continue to cook for 2-3 minutes until the compote thickens slightly. If using vanilla extract instead of a vanilla bean, stir it in now.

Cool and serveRemove from heat and allow the compote to cool. It will thicken further as it cools. Serve warm, at room temperature, or chilled depending on your preference. Traditional Scandinavian serving includes a dollop of whipped cream, vanilla custard, or a splash of cold heavy cream.
