  1. Prepare the filling
    Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for 30 seconds. Add chopped onions and sauté until golden brown, about 3-4 minutes. Add ginger-garlic paste and cook for another minute until fragrant.
  2. Cook the potato mixture
    Add mashed potatoes, green peas, samosa masala, and salt to taste. Mix well and cook for 5-6 minutes, stirring occasionally. The mixture should be well-combined and heated through. Remove from heat and let it cool slightly.
  3. Warm the tortillas
    Heat each tortilla or flatbread on a dry skillet for about 30 seconds on each side until warm and pliable. Keep them covered with a kitchen towel to stay warm and soft.
  4. Assemble the wraps
    Lay a tortilla flat on a clean surface. Spread 2 tablespoons of yogurt in the center. Add about 1/4 of the potato filling in a line down the center of the tortilla. Drizzle with 1-2 tablespoons each of tamarind chutney and mint-coriander chutney.
  5. Add the chaat toppings
    Sprinkle chaat masala and fresh coriander leaves over the filling. Add a generous amount of sev for crunch. Roll up the tortilla tightly, tucking in the sides as you go, to form a wrap.
  6. Secure and serve
    Wrap each roll in parchment paper or aluminum foil to hold it together. Cut each wrap diagonally in half if desired. Serve immediately while the contrast between the warm filling and cool toppings is at its best.
