
Roasted Vegetables with Miso Tahini Sauce

Prepare the vegetablesPreheat the oven to 425°F (220°C). Wash and cut all vegetables as indicated. Make sure to cut the sweet potato, carrots, cauliflower, bell pepper, zucchini, and red onion into similarly sized pieces to ensure even cooking.

Season and arrange for roastingPlace all the prepared vegetables on a large baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly. If needed, use two baking sheets to avoid overcrowding, which would cause the vegetables to steam instead of roast.

Roast the vegetablesPlace the baking sheet(s) in the preheated oven and roast for 25-30 minutes, stirring halfway through cooking time. The vegetables should be tender and caramelized at the edges when done.

Prepare the miso tahini sauceWhile the vegetables are roasting, prepare the sauce. In a medium bowl, whisk together the tahini paste, white miso paste, rice vinegar, maple syrup or honey, and water until smooth. If the sauce is too thick, add additional water, one teaspoon at a time, until it reaches a pourable consistency.

Finish and serveOnce the vegetables are roasted, transfer them to a serving platter. Drizzle the miso tahini sauce over the vegetables, sprinkle with toasted sesame seeds, and serve immediately. You can also serve the sauce on the side for dipping.
