Juicy burger with crispy ramen noodle buns

Prepare the ramen bunsCook the ramen noodles according to package directions but only for about 3 minutes so they're slightly undercooked. Drain well and cool. Divide noodles into 8 equal portions. Mix each portion with 1/2 beaten egg. Press each portion into a 4-inch round using a ring mold on a parchment-lined baking sheet. Cover with plastic wrap and refrigerate for at least 15 minutes to set.

Make the burger pattiesIn a large bowl, combine the ground beef, 1 tablespoon soy sauce, sesame oil, half of the green onions, garlic, ginger, salt, and pepper. Mix gently but thoroughly and shape into 4 patties, slightly larger than the ramen buns. Press a small indent in the center of each patty with your thumb to prevent it from puffing up during cooking.

Prepare the special sauceIn a small bowl, whisk together mayonnaise, sriracha, and the remaining 1 tablespoon of soy sauce until well combined. Set aside.

Cook the ramen bunsHeat 1/4 inch of vegetable oil in a large skillet over medium-high heat. Carefully place the ramen discs in the hot oil and fry until golden brown and crispy, about 2-3 minutes per side. Transfer to paper towels to drain excess oil.

Cook the burger pattiesIn a clean skillet or grill pan, cook the burger patties over medium-high heat for about 3-4 minutes per side for medium doneness, or to your preferred level of doneness. Add a slice of cheese to each patty during the last minute of cooking to melt.

Assemble the burgersPlace a ramen bun on each plate, crispy side down. Spread some of the special sauce on each bun, then top with arugula. Add the cheese-topped patty, more sauce, and sprinkle with remaining green onions. Top with the second ramen bun, crispy side up.
