  1. Prepare the quinoa
    If you haven't already, cook the quinoa according to package instructions. Allow it to cool completely. The quinoa should be fluffy and dry, not wet or sticky.
  2. Process the beans
    In a large bowl, mash the black beans with a fork or potato masher, leaving some beans partially intact for texture. You want a combination of mashed beans and some whole pieces.
  3. Combine ingredients
    Add the cooled quinoa, diced bell pepper, red onion, grated carrot, eggs, breadcrumbs, Parmesan cheese, minced garlic, olive oil, and all seasonings to the mashed beans. Mix thoroughly until well combined.
  4. Form the patties
    With clean hands, divide the mixture into 4 equal portions. Form each portion into a patty about 3/4-inch thick, pressing firmly to ensure they hold together. If the mixture seems too wet, add more breadcrumbs; if too dry, add a splash of olive oil.
  5. Chill the patties
    Place the formed patties on a plate lined with parchment paper. Cover and refrigerate for at least 30 minutes to help them firm up and hold their shape during cooking.
  6. Cook the burgers
    Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the patties (you may need to cook in batches) and cook for 4-5 minutes per side until they develop a golden-brown crust and are heated through.
  7. Serve
    Serve the quinoa burgers on whole grain buns with your choice of toppings such as lettuce, tomato, avocado, red onion, and condiments like mayo, mustard, or ketchup.
