  1. Prepare the cheese
    If using a traditional provolone wheel, leave it whole. If using a large block, cut into 1-inch thick slices. Let the cheese come to room temperature for about 30 minutes before cooking.
  2. Season the cheese
    Drizzle the provolone with 1 tablespoon of olive oil, then sprinkle with oregano, red pepper flakes, minced garlic, black pepper, and a pinch of salt.
  3. Preheat the cooking surface
    If using a cast-iron skillet, heat it over medium-high heat until very hot. If using a grill, preheat to medium-high heat. If using a broiler, preheat it with the rack positioned about 6 inches from the heat source.
  4. Cook the provoleta
    Place the cheese in the hot skillet, on the grill (use a cast iron plate for the grill), or under the broiler. Cook for 2-4 minutes until the bottom is golden and the cheese starts to melt but still holds its shape.
  5. Finish and serve
    Remove the provoleta from heat when it's bubbly and slightly browned on top but still holds its shape. Drizzle with the remaining olive oil, sprinkle with parsley, and serve immediately with lemon wedges and sliced bread. The cheese should be eaten while hot and gooey.
