  1. Prepare the vegetables
    Thoroughly clean the leeks as they often contain dirt between the layers. Slice the white and light green parts into thin rings. Peel and dice the potatoes into 1-inch cubes. Finely chop the onion and mince the garlic.
  2. Sauté the aromatics
    In a large heavy-bottomed pot, melt the butter over medium heat. Add the leeks, onion, and garlic. Cook for about 5-7 minutes until softened but not browned, stirring occasionally.
  3. Simmer the soup
    Add the diced potatoes, bay leaf, salt, and pepper to the pot. Pour in the broth and bring to a boil. Reduce heat to low, cover, and simmer for about 20-25 minutes until the potatoes are completely tender.
  4. Blend until smooth
    Remove the bay leaf. Using an immersion blender, purée the soup until smooth and creamy. Alternatively, carefully transfer the soup in batches to a blender and purée, then return to the pot.
  5. Finish the soup
    Stir in the heavy cream and gently heat the soup through over low heat. Adjust seasoning with salt and pepper to taste. Be careful not to let the soup boil after adding the cream.
  6. Serve and garnish
    Ladle the hot soup into bowls and garnish with freshly chopped chives. For an elegant touch, drizzle a small amount of cream on top and swirl with a toothpick.
